  1. **Steam for Precision:** Place your farm-fresh eggs in a steamer basket over boiling water. Steam them for precisely 15 minutes. This gentle, consistent heat cooks the eggs evenly without aggressive bubbling, which can sometimes lead to cracking.
  2. **The Immediate Ice Bath:** Once steamed, immediately transfer the eggs to a bowl of ice-cold water. This sudden temperature change halts the cooking process, preventing a greenish ring around the yolk, and helps the egg whites contract, subtly separating them from the shell membrane.
  3. **Gentle Cracking & Water Immersion:** Once cooled, gently roll each egg between your palm and a flat surface to create a network of fine cracks across the shell. Then, return the cracked eggs to the bowl of cold water while you prepare the others. Smoked Salmon Deviled Eggs

Ingredients

  • 6 large eggs
  • 5 tablespoons mayo
  • ½ teaspoon dried dill weed
  • ½ teaspoon black pepper
  • 2 oz 55gr smoked salmon*

Instructions 

  • Bring a pot of water to a boil. Place the eggs in a steamer basket and steam over the boiling water for 15 minutes. Immediately submerge the steamed eggs in a bowl of ice-cold water until thoroughly cooled. Carefully peel the eggs, cut them in half lengthwise, and gently separate the egg yolks from the whites.
  • In a medium bowl, mash the separated egg yolks with a fork until smooth. Stir in the mayonnaise, dried dill weed, and black pepper until well combined and creamy. Transfer this flavorful filling into a piping bag (or a sturdy zip-top bag with one corner snipped off) and pipe the mixture back into the hollowed-out egg white halves. Garnish each deviled egg with small, elegant pieces of smoked salmon and serve immediately for the best flavor and texture.
